Your note on sourdough is inspiring! I recently became obsessed with a youtuber who focuses on homemaking (the channel is Sarah Therese Co, if you're interested in watching videos of a young mom cleaning her kitchen) and she talks about sourdough a lot, so it's been on my mind. I need to get into sourdough! The last time I tried, my starter seemed like it was continually getting black/gray liquid on the top (even when it was in the fridge and I was feeding it) and I just couldn't keep track of it. But now I'm feeling inspired to try again.

The black liquid is totally fine! Just drain it off and keep on using! I've kept this starter going for over four years now.

That's good to know, thanks. I threw out that past starter a long time ago, but I have recently made a new starter and I appreciate the advice and encouragement. So far, so good! My theory is that my last starter was going crazy because I used only freshly-ground whole wheat flour to feed it, so this time around I'm feeding with unbleached flour and things are moving more slowly-which is a lot easier for me to handle!

The grey liquid is vinegar and it’s a sign that your sourdough mother is hungry and run through all the available sugars. As long as it smells tangy and not like vomit or other gross smells, it’s absolutely fine! I’m planning to pull my starter out of the fridge when I get my thesis submitted! It’s been in there two years now. 🤞🏻

Church building restoration is a challenging issue, especially when preservation of the buildings entails conversion for non-religious use. My husband & I watch a lot of British real estate shows (loads better than obnoxious American HGTV) and I get lots of feelings when they feature an old church that’s been converted into a house (at best) or pub. I always find myself saddened that such “restorations” remove beautiful interior features that were designed to aid in prayer and worship, so it’s more accurate to call it “reclamation” than preservation. At that rate, I almost would prefer that nature take its course with the buildings instead.

I don't think that should be the case for all buildings, especially those with special architectural, artistic, or historic value. The churches I'm talking about have historic value.

I'm glad you warned me about the Ann Patchett novel. I enjoy her writing too, but I would rather spend my time rereading Bel Canto if the new one isn't worth it.
